Easy, yummy, and filling. this soup goes great with salad and bread. I made it the day before yesterday and was pretty pleased with the results. Yum!

Golden Lentil Soup

2 T. olive oil
1 medium onion, diced
3 cloves garlic, chopped
1 c. red lentils
4 c. hot water
2 veggie bullion cubes
1 tsp. dried basil
1 tsp. dried oregano
1 medium tomato, diced
2 tsp. fresh lemon juice
salt & pepper to taste
Golden Lentil Soup

In a large pan, heat the olive oil. Add onion and garlic and sautee until onions are translucent. Add lentils and sautee for 1 minute. Add hot water, bullion, basil and oregano. Simmer for 20 minutes or until lentils are tender.

Add lemon juice and diced tomatoes, return to a simmer. Taste and adjust seasoning as desired. Serve.

    …of course you can always substitute water and bullion for a nice broth. I just happen to be a bullion-user. 😉
