In which there are delicious tostadas.

Limon Bean Tostadas with Avocado

Ingredients

4 tostada shells
1 can plain refried beans
lime taco sauce*, to taste
1/4 c. shredded Mexican cheese
1/3 c. cilantro, chopped
2 T. red onion, diced
1/4 c. tomato, diced
2 radishes, sliced
2 T. cotija**, crumbled
1/2 avocado, sliced
lime wedges

Procedure

1. Heat refried beans.
2. Do your veggie prep. (Chop cilantro, dice onion and tomato, slice radish, slice avocado.)
3. Crumble cotija.
4. When the beans are hot, stir in anywhere from 1 tsp. to 3 Tbsp. lime salsa.
5. Spread tostada shells with limon refried beans.
6. Top with shredded cheddar.
7. Top with cilantro, tomato, onion, radish, cotija, and avocado.
8. Garnish with a wedge of fresh lime and serve.


* lime taco sauce is a thin, mildly tart taco sauceLime hot sauce
** cotija is a firm, salty, feta-like Mexican cheese
